Waste Hack: Brown Banana Jam

Brown bananas are not so tempting to eat, but they are so good for cooking! Before you make another bloody banana bread or a yet another banana smoothie - have a look at our waste warrior recipe: Black Banana Jam. You'll be waiting for your bananas to turn black once you've tried this!

Makes 2-3 x 300 ml jars. 

Ingredients:

  • 3-4 overripe bananas 
  • zest & juice of 1 orange or lemon
  • Vanilla essence
  • 1/3 brown sugar  
  • pinch of cinnamon
  • 100ml water/apple juice 

Method:

Mash 3-4 bananas and put into a pan with the juice and zest of the lemon or orange. Add in a splash of vanilla, a pinch of cinnamon and 1/3 cup brown sugar then pour about 100ml water or apple juice and combine well. Put on low heat and stir to dissolve the sugar. Turn up the heat to medium and cook down until thick and glossy brown (around 10-15 mins). Bottle into a clean jar or container and store in the fridge for up to 3 weeks.

Store in the fridge for up to 3 weeks.
