Cornersmith's Guide to Salad Making

Cornersmith is famous for bringing salads to the centre of the table. We have long considered salad eating an everyday way to nourish and delight the appetite. In Cornersmith's Guide to Salad Making, we will show you how to make salads worth getting excited about. We will begin with the fundamentals of seasonal eating and give you three interchangeable master recipes for slaws, leafy greens and hearty salads that make a complete meal. The lessons you learn in this workshop will be the building blocks of both your midweek salad and the fanciest show-off salad. You will also learn the little extra tricks that make a salad sing - like quick pickles, spiced roasted fruits, toasted seeds and nuts, and punchy dressings. Make and take home a collection of staples that will turn even a few leaves of rocket into something special.

In this class you will make and take home:

  • A jar of roasted pickled fruit 
  • A nutrient dense seed and nut seasoning mix 
  • A jar of quick pickles that will teach you how to reduce your food waste and inspire your salads
  • A perfectly balanced dressing 

Plus, you will sample a variety of salads, learn the secrets to making exceptional dressings and a few knifes skills that will make a real difference to the aesthetic and texture of your salads.
